Good luck. There are hundreds of tiny bones, you will not be able to do it without faffing, try using narrow nose pliers but you will not get them all.

I ended up hot smoking and doing what I could with the sections that were not too bad. I was wondering if there was anything easier.... clearly not! Oh well, I did get a reasonable amount of flesh off.
I think there are more eels than water in the Bristol Channel!
