not a location but the name of a specific cut of chuck beef

fore quarter is frugal and very tasty

i was checking what steaks sainsburys sold after seeing a 20 year old james martin show

they have a lot from basic to michelin* quality ingredient, anyway they had ranch steak

£6 for two decent size ones

as i know chuck i decided to use this recipe rather than flash frying it

here we go

two ranch steaks , add a visible sprinkle of sal de gironde both sides(other salts are available), beat to twice area /half thickness, add juice of ripe lime
leave for 30 mins

cut a large onion (or two) into dice, crush a clove of garlic and mix a with half ounce good butter
cut one or two large potatoes into 4 mm slices
put oven on to 160/170 C(casserole temp)

30 mins later, heavy bottomed small pan with lid, quite hot , high temp oil(rice bran works well) fry both steaks a few minutes a side until caramelized, put them on a plate

add onions to pan with a little water, once blanched reduce water , de-glaze the pan with a little whisky(or water etc)
add steaks add a teaspoon of veg buillon powder, top with potatoes, add boiling water to potato level, add garlic butter put lid on

put in oven for an hour, remove lid and give it another 45 mins at 180(a bit hotter) to crisp the potato topping

serves 4 to 6 for well under £10 even with a bit of salad
very tender , very flavorful, and nourishing

don't let on or the price will go up but fore quarter cuts are ace if cooked properly, that goes for cow sheep, deer or pig etc

once i have asked tt to ask the fishmongers about cod heads i might have a very frugal cod head recipe(dont worry the cheeks will be deep fried and served with sauce, the bones and eyes etc will be used in the reduced stock to make the sauce base
i might get a pinch of saffron into that somehow

oddly enough this sort of cooking is easier and less time consuming than most "domestic" styles
