obtain moo, sirloin steak works, ranch steak might work etc
rub meat with good salt and lemon juice, marinade for as long as seems sensible, it will vary from an hour or so to 2 days in a fridge
chambre meat
cook as a rare steak( tuition ,practice and skill required)
rest overnight in fridge

next
slice meat on the "flat" to give two pink and two caramelized surfaces
cut meat into 5 to 7 mm jullienne, cutting to give the shortest grain by choosing the best angle

now the easy bit
per portion
4oz meat
add good light soy sauce until a bit wetter than damp
add 1/2 tsp dried ginger
add 18th tsp ancho chilli
shake and leave for a bit

per portion
one very large of 2 or 3 small /medium spring onions, cut very fine
one largeish clove of garlic , slightly crushed then sliced
one golf ball size tomato cut in quarters

choose a suitable size pan for the portions you are making
(eg small balti for one , big wok for

per portion put three tsp of high smoke point oil in the pan (rice bran works , seed oils should work etc)
add caraway seeds, let rest for a while

heat pan to smoke point
start stirring
add onion and garlic
stir until almost smoking again
(less than 2 mins)
add meat and soy
stir
once the liquid has boiled it is done
less than 2 mins)

fine as a stand alone, good with rice or noodle
